SPARKY'S BEGINNING

Jerk is a style of BBQ cooking native to Jamaica in which meat or vegetables are marinated in a hot, aromatic spice mixture called Jamaican jerk spice. This spice mix can come as a dry-rub or a wet marinade.

Jerk cooking and seasoning has followed the Jamaican diaspora all over the world. Today, this uniquely aromatic and spicy food has become immensely popular on the streets and in many restaurants in cities anywhere a significant population of Jamaican descent exists, such as New York, London and Toronto.

Creators Ernie Garland and Maria Lynch started Sparky's Jerk Barbecue in 2014 when Sydney’s first ever pop-up reggae event was in need of a food vendor who could cater and compliment their reggae experience. From feeding friends and neighbours in their backyard in Erskineville, they took it to the next level - feeding the people!  It was a runaway hit and still is!

 
Since then, the demand for their jerk chicken and chilli sauce has grown, building a strong following of hungry jerk chicken eaters. Sparky's can be found feeding the people at events such as Sydney’s Inner West Reggae Carnival and Beer Footy and Food Festival. They also have regular gigs at Shark Island Brewing Company in Cronulla, Sauce Brewery in Marrickville and Young Henrys in Newtown.


As the momentum grew, Sparky's followers were constantly asking whether Sparky’s popular Fyahcraker Chilli Sauce and Sparky’s Jerk Marinade would ever become available in bottles and jars so that they could become barbecue heroes at home.... Sparky’s obliged.

 

Now, Sparky’s Fyahcraker Chilli Sauce and Sparky’s Jerk Marinade can be found in selected fine food purveyors and of course right here online.  


Sparky’s Jerk Marinade has been crafted to produce an aromatic, spicy, hot authentic flavour using  the fiery habanero chilli together with only the freshest ingredients. And, for those more daring, the Fyahcraker Chilli Sauce enhances the spiciness of the jerk marinade and really packs a punch. It also stands alone as a flavour filled hot spicy sauce. 

       

Sparky’s Jerk Marinade has been used for many wonderful dishes, including Xmas ham, octopus, pork, snapper, even sausages!
